Ingredients

500 g chicken livers ( chop 2cm pieces , discard vein )
3 garlic cloves ( fat ones , crushed )
2 chilies ( finely chopped )
1 tablespoon butter
1 tablespoon olive oil
1/4 cup sherry wine or 1/4 cup port wine
400 g tomato paste
2 cups water
2 bay leaves
1 tablespoon oregano
2 cups boiling water
1 cup basmati rice
1 teaspoon butter
This Chicken Livers on Rice recipe brings back many memories of my Mum's cooking. It is a simple and delicious recipe that she used to make for us when we wanted something comforting and filling. Chicken liver is an affordable meat that is often used in stews and soups in many cultures. Instructions

1.Rinse the rice in cold water and drain. Place the rice in a saucepan with 2 cups of boiling water and 1 teaspoon of butter. Cook on low heat until the water has been absorbed and the rice is cooked.
2.In a separate pot, heat up 1 tablespoon of butter and 1 tablespoon of olive oil on medium heat. Add the garlic and chilies and sauté for 1 minute.
3.Add the chopped chicken livers and cook for 2-3 minutes, until browned.
4.Add the tomato paste, sherry or port wine, water, bay leaves, and oregano. Mix well, then cover and let simmer for 15-20 minutes. Stir occasionally.
5.Serve the chicken liver on a bed of rice.
