1/3 cup port wine or 1/3 cup cognac
2 eggs
1/4 teaspoon allspice , ground
1/2 teaspoon salt
1/4 teaspoon white pepper
1 cup milk , boiling

Instructions

1.Rinse chicken livers and pat dry. Trim away any sinewy or greenish spots and chop coarsely.
2.Mince the turkey bacon and place in a large saucepan or Dutch oven with the shallot. Cook over medium heat, stirring, until bacon has rendered its fat and is lightly browned.
3.Add chopped liver and cook, stirring, until it has lost its raw color but is still a little pink in the center.
4.Add port wine or cognac, eggs, allspice, salt, white pepper, and milk, and mix well.
5.Preheat oven to 375°F.
6.Pour liver mixture into blender or food processor and blend until pureed (it should still be slightly chunky).
7.Scrape mixture into a greased 8-inch loaf pan, smoothing the top.
8.Bake at 375°F for 40-45 minutes, or until just set.
9.Chill overnight to let flavors meld and slice to serve.
