450 g chicken livers

9 peppercorns ( to garnish )
fresh coriander ( cilantro , to garnish )

Instructions

1.Soak chicken livers in milk for 1-2 hours to remove any bitterness.
2.In a pan, melt butter and sauté onions until soft.

4.Add chicken livers and cook until browned on the outside and still pink on the inside, around 10-12 minutes.
5.Add lemon juice, dry sherry, and crushed green peppercorns and combine well to let the flavors meld.
6.Let the mixture cool down completely before blending it in a food processor to make a smooth pate.
7.Pour the pate in a small container and chill for at least 4 hours before serving.
8.Serve the pate garnished with peppercorns and fresh coriander.
