Instructions

1.Preheat your oven to 180°C/ 356°F.
2.Combine the thickened cream and margarine in a saucepan, and heat over low heat. Stir occasionally until fully melted.
3.Add minced garlic to the mixture and stir for a few seconds, then remove from heat and set aside.
4.Cut a pocket in each chicken breast and stuff each pocket with 1 tablespoon of cheese.
5.Heat some olive oil in a pan over medium heat, then place the chicken breasts in the pan and sear them for 3-4 minutes until golden.
6.Transfer the chicken breasts to a baking dish and pour the garlic sauce over them.
7.Slice the tomatoes and the green capsicum and arrange them on top of the chicken in the baking dish. Sprinkle with additional cheese.
8.Bake in the preheated oven for 25-30 minutes until the chicken is fully cooked and the cheese is melted.
9.While the chicken is baking, chop the lettuce and make the salad dressing by whisking together the French dressing and some olive oil.
10.Toss the chopped lettuce with the salad dressing to make the Sandy's salad.
11.Serve the chicken Kieves hot with Sandy's salad on the side.
