1 tablespoon butter

1 green apple , peeled , cored and diced
2 cups water

1 cup chicken broth
1 teaspoon salt

4 chicken breasts , skinless and boneless
2 tablespoons flour
2 eggs , beaten
5 tablespoons breadcrumbs , dried
2 cups vegetable oil , for deep frying

Instructions

3.In a separate bowl, mix cornstarch with 1 tablespoon of water and add to the sauce. Cook for an additional 2-3 minutes until the mixture thickens. Remove from heat and blend the mixture until it becomes smooth in texture.
4.Cut chicken breasts into thin slices and season with salt and pepper. Dip chicken slices in flour, then beaten egg and breadcrumbs
5.Heat oil in a frying pan over medium-high heat. Fry chicken until golden and crispy, for 3-5 minutes on each side. Set aside on a paper towel to drain excess oil.
6.In a separate pan, melt butter and add onions, carrots and potatoes. Cook until vegetables are tender, for approximately 10 minutes.
7.Serve chicken katsu on a plate along with the curry sauce and vegetables.
