Chicken Kabsah is a traditional Middle Eastern dish that is similar to biryani or paella. It's a one-pot meal that features aromatic spices and tender chicken slow-cooked until its meat falls off the bone. Kabsah is typically served with spiced rice and is popular across the Arab world. This dish is hearty, flavorful, and filling, making it an excellent main course for family gatherings or dinner with friends.

Instructions

.Rinse rice in cold water until the water runs clear. Drain and set aside.
.In a pot, heat oil over medium-high heat and sauté onions until translucent. Add in the chicken pieces and cook until browned on both sides.
.Add in the chopped tomatoes, tomato paste, baharat spice mix, cardamom powder, garlic powder, cinnamon stick, and low-sodium chicken bouillon cubes. Stir in 3 cups of water and bring to a boil.
.Reduce the heat to low and let the mixture simmer uncovered for 30-45 minutes, or until the chicken is cooked through and falling off the bone.
.Remove the chicken pieces from the pot and set aside. Add another 1 cup of water to the pot and bring to a boil.
.Stir in the rinsed and drained rice and raisins, then reduce the heat to low and cover the pot with a tight-fitting lid. Let the rice cook for 15-20 minutes, or until all the liquid has been absorbed.
.Once the rice is cooked, remove from heat and let it sit covered for 10-15 minutes.
.Serve the rice on a plate and top with the cooked chicken pieces. Optional: garnish with chopped fresh parsley or cilantro before serving.
