Ingredients

1 1/2 lbs chicken pieces
12 cups water
3 cinnamon sticks
1 teaspoon cardamom pod
1 teaspoon whole cloves
1 teaspoon black peppercorns
3 tablespoons omani mixed spice
3 chicken bouillon cubes
3 tablespoons ghee
15 ounces chickpeas , drained
3 cups basmati rice , washed and drained
4 tablespoons sultanas or 4 tablespoons raisins
1 1/2 teaspoons saffron threads , soaked in 1/4 cup rose water
Chicken Kabouli (Muscat Style) is a popular dish in the Middle East, specifically in Oman. The dish is known for its aromatic and flavorful rice and tender boiled chicken pieces. Instructions

1.In a large pot, boil the chicken pieces in water with cinnamon sticks, cardamom pod, whole cloves, black peppercorns, Omani mixed spice, and chicken bouillon cubes for 30 minutes.
2.Remove the chicken pieces from the pot and set them aside. Keep the broth in the pot.
3.In a separate pan, heat ghee and fry chickpeas for 10 minutes, then set them aside.
4.In the same pan, add the washed and drained basmati rice and fry for 5 minutes. Pour the rice into the pot of chicken broth and mix well.
5.Add saffron threads soaked in rose water and raisins to the pot of rice. Mix well.
6.Place the boiled chicken pieces on top of the rice. Cover the pot and cook on high heat for 10 minutes.
7.Reduce the heat to low and simmer for 20 minutes or until the rice and chicken are fully cooked.
