Ingredients

6 boneless chicken breasts , cut into 1/2-inch wide strips
1 tablespoon brown sugar
1 tablespoon curry powder
2 tablespoons peanut butter , crunchy style
1/2 cup soy sauce
1/2 cup lime juice
2 garlic cloves , minced
1 tablespoon dried chili
2/3 cup peanut butter , crunchy style
1 1/2 cups coconut milk , unsweetened
1/4 cup lemon juice
2 tablespoons soy sauce
2 tablespoons molasses or 2 tablespoons brown sugar
1 teaspoon gingerroot , grated
4 garlic cloves , minced
1/4 cup chicken broth
1/4 cup soymilk
1 teaspoon cayenne pepper
grated lime zest , to taste ( garnish )
fresh fresh cilantro stem , to taste ( garnish )

Instructions

1.In a large bowl, mix the brown sugar, curry powder, 2 tablespoons of peanut butter, soy sauce, lime juice, 2 minced garlic cloves and dried chili.
2.Add chicken strips to the mixture and coat well. Let it marinate in the refrigerator for at least 4 hours.
3.Preheat the oven to 180°C.
4.In a pot, combine peanut butter, coconut milk, lemon juice, soy sauce, molasses, grated ginger, minced garlic, chicken broth, soymilk and cayenne pepper. Bring to a simmer over medium heat.
5.Transfer the chicken strips to a baking dish and bake for 20-25 minutes until cooked through.
6.Garnish with grated lime zest and fresh cilantro stem.
