Ingredients

3 1/2 lbs whole chickens , skin on , cut in pieces with the backbone removed
1 tablespoon olive oil
3 tablespoons unsalted butter , divided
4 medium leeks , white & pale green parts finely chopped ( about 2 cups )
2 tablespoons shallots , finely chopped
4 medium carrots , halved diagonally
1 cup dry white wine ( preferably Riesling )
1 lb small red potato , about 2-inch in diameter
2 tablespoons flat leaf parsley , finely chopped
1/2 cup heavy cream
lemon juice , to taste
sea salt , to taste
fresh ground black pepper , to taste

Instructions

1.Preheat your oven to 325°F (165°C).
2.Season the chicken with sea salt and pepper.

4.Add the chicken pieces to the skillet and cook until browned on both sides, about 10 minutes.

7.Cover the skillet with a tight-fitting lid and place in the preheated oven.
8.Bake for 1 hour, stirring occasionally.
9.Remove the skillet from the oven and transfer the chicken, leeks, shallots, and carrots to a platter.
10.Place the skillet back on the stove over medium heat.
11.Add the remaining 1 tablespoon of butter to the skillet and stir until melted.
12.Add the potatoes to the skillet and cook until tender.
13.Stir in the parsley and heavy cream and cook until the sauce has thickened.
14.Season the sauce with lemon juice, sea salt, and freshly ground black pepper to taste.
15.Pour the sauce over the chicken and vegetables and serve hot.
