Instructions

6.Season with salt and pepper.
7.Meanwhile, sear chicken in a well-seasoned 12-inch cast-iron skillet over medium-high heat until browned on all sides, 8 to 10 minutes.
8.Transfer skillet to oven and roast until just cooked through, 8 to 10 minutes. Rest chicken, loosely covered with foil, 5 minutes.
9.Divide chicken among 4 plates and top each serving with sauce and a quail egg, if using.
