2 tablespoons dill
This Chicken in a Mushroom-Dill Cream Sauce is a classic dish that is easy to prepare and always delicious. The chicken breasts are first cooked on the stove and then finished in the oven, which gives them a lovely golden color and ensures that they are cooked through. The mushroom and shallot sauce is then prepared, which is made with heavy cream, chicken stock, and white wine. The Dijon mustard and dill are added at the end, which gives the sauce a wonderful creamy and herbaceous flavor. This dish is perfect for a cozy night in or for entertaining. It pairs well with a variety of vegetables or pasta and can be made ahead of time and then reheated in the oven when your guests arrive.

Instructions

1.Preheat the oven to 350°F.
2.Season the chicken breasts generously on both sides with salt and pepper.
3.In a large ovenproof skillet or sauté pan, melt the butter and oil over medium-high heat. Add the chicken and cook until golden brown on both sides, about 5-6 minutes per side. Transfer the chicken to a plate and set aside.
4.Add the sliced mushrooms and minced shallot to the pan. Cook, stirring occasionally, until the mushrooms have released their liquid and have softened, about 5-7 minutes.
5.Increase the heat to high and add the white wine to the pan. Cook for 2-3 minutes, or until the wine has reduced by half.
6.Add the heavy cream, chicken stock, Dijon mustard (optional) and dill to the pan. Stir to combine and bring to a simmer.
7.Return the chicken to the pan and spoon some of the sauce over the top. Transfer the pan to the oven and cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
8.Serve the chicken in the mushroom-dill cream sauce with your choice of vegetables or pasta.
