1 can red enchilada sauce

1/2 cup black olives ( optional )
1/2 cup fresh cilantro ( optional )
1 small yellow onion
8 ounces shredded cheddar cheese
Frito corn chip
1/2 cup green onion
1 cup sour cream

Instructions

1.Preheat the oven to 375 degrees F (190 degrees C).

5.Fill each flour tortilla with about 1/4 cup of the chicken mixture and a handful of crushed Fritos. Roll up and place seam-side down in the baking dish. Repeat with the remaining tortillas.
6.Pour the remaining sauce over the tortillas. Top with the remaining black olives, crushed Fritos, and green onions.
7.Bake in the preheated oven for 20 to 25 minutes, or until the enchiladas are hot and bubbly.
8.Serve hot with sour cream on top.
