Ingredients

6 large chicken thighs ( with skin and bones , about 2 3/4 lb total )
4 sprigs fresh thyme
1 bay leaf
1/2 teaspoon whole white peppercorns
1 1/2 teaspoons salt ( to taste )
1 lb carrot , peeled and halved , sliced into thirds
1 lb parsnip , peeled and halved , sliced into thirds
1 onion , halved
1 celery rib , cut crosswise into 3 pieces
3 garlic cloves
1/4 cup all-purpose flour
1 cup whole milk
1/2 cup heavy cream
1 tablespoon white wine vinegar
1/2 teaspoon sugar
2/3 cup chopped fresh dill

Instructions

1.In a large pot, bring water, chicken, thyme, bay leaf, peppercorns, and 1 tsp salt to a boil.
2.Reduce heat, cover, and simmer until the chicken is cooked through, approximately 30-40 minutes.
3.Remove chicken from the pot with a slotted spoon and place aside.
4.Strain the broth and discard the solids; reserve 2 cups of the broth.
5.In a separate pot, sauté carrot, parsnip, onion, celery and garlic, in butter over medium heat until vegetables are browned.
6.Sprinkle flour over the vegetables and continue cooking, stirring constantly for 1-2 minutes.
7.Slowly pour in the reserved broth, stirring until smooth.
8.Add cream, milk, vinegar, sugar, and 1/2 tsp salt.
9.Reduce heat to low and simmer for 10-15 minutes or until the sauce thickens.
10.Add dill and chicken to the thickened sauce and cook for 5 minutes or until fully heated.
11.Serve and enjoy!
