1 - 1 1/4 lb thinly sliced chicken breast
1 can quartered water-packed artichoke hearts , drained
1/2 cup white wine
1/2 cup chicken stock
1/4 cup fresh squeezed lemon juice
1/4 cup minced shallot
1/3 cup flour , and
1 tablespoon flour
2 tablespoons butter
2 tablespoons olive oil
1 tablespoon chopped fresh parsley
1 1/2 teaspoons kosher salt
1 teaspoon cracked black pepper
1/2 teaspoon paprika
eggwash -one egg beaten with 3 tbs water

Instructions

1.Preheat oven to 400 degrees F.
2.Season chicken with 1 tsp kosher salt, 1/2 tsp cracked black pepper and 1/2 tsp paprika.
3.Bread chicken by dusting it evenly with flour and shaking off excess flour. Dip chicken into eggwash and then back into flour.
4.Heat a skillet over medium-high heat with 2 tbsp olive oil and 1 tbsp butter. Add chicken and cook for 2-3 minutes per side until golden brown. Remove chicken from skillet and set aside.
5.Add remaining 1 tbsp butter to skillet, then add shallots and saute for 1-2 minutes until fragrant. Pour in white wine, chicken stock and lemon juice, scraping off any browned bits from the pan. Let the sauce simmer for a few minutes until it thickens.
6.Add artichoke hearts and chopped parsley to the sauce. Add chicken to the skillet and spoon the sauce over the chicken. Put skillet in the preheated oven and bake for 10-15 minutes until fully cooked.
7.Serve hot and enjoy!
