Ingredients

3 small boneless skinless chicken breast halves or 2 large boneless skinless chicken breast halves
2 cups chicken stock
1 small green pepper , diced
1 onion , diced
3 garlic cloves , minced
2 tablespoons oil
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon pepper
8 ounces Mexican tomato sauce
14 ounces stewed tomatoes , broken up
10 ounces red enchilada sauce
4 ounces diced green chilies
8 flour tortillas , 10-inch size
16 ounces spicy refried beans
4 cups Mexican blend cheese , shredded
This recipe is a Mexican food classic, a mix of enchiladas and burritos. Enchiladas are lightweight flour tortillas stuffed with savory fillings, whereas burritos are larger flour tortillas stuffed with beans, rice, and meat. The recipe was adjusted to make an easy one-pan meal with all of the flavor of both dishes. Chicken Enchiritos are tasty, filling, and simple to make. It delivers a complex of flavors in every bite.

Instructions

1.Preheat oven to 350°F
2.Add chicken breasts to a large pot with chicken stock, green pepper, onion, garlic, oil, oregano, cumin, salt and pepper.
3.Bring everything to a fast simmer over high heat, then reduce the heat to medium-low. Cover the pot and gently simmer until chicken is cooked through (165°F internal temperature).
4.Remove chicken from pot, shred it, and set it aside.
5.Add the Mexican tomato sauce, stewed tomatoes, enchilada sauce, and green chilies to the pot. Stir everything together well and then turn the heat up to medium.
6.Let the sauce gently simmer for about 15 minutes, stirring occasionally.
7.Spread a teaspoon of the spicy refried beans down the center of each tortilla. Top with some of the shredded chicken, and then roll the tortilla up tightly.
8.Lay rolled tortillas in a baking dish and top them with the sauce and shredded cheese.
9.Bake for 20-25 minutes, or until the cheese is melted and bubbly.
