Ingredients

2 lbs skinless chicken breasts
1 can condensed cream of chicken soup
1 1/4 cups sour cream
1/4 teaspoon chili powder
1 tablespoon butter
1 small onion , chopped
1 can chopped green chilies , drained
1 package taco seasoning mix
1 bunch green onion , chopped , divided
1 cup water
1 teaspoon lime juice
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
5 flour tortillas ( some use corn , but I like Flour the Carb balance ones )
3 cups cheddar cheese , shredded , divided
1 can enchilada sauce
1 can sliced black olives

Instructions

1.Preheat oven to 350°F.
2.Season chicken breasts with taco seasoning mix.
3.In a medium bowl, mix cream of chicken soup, sour cream, chili powder, lime juice, onion powder, and garlic powder together.
4.In a skillet, melt the butter and cook onions until tender.
5.Stir in canned green chilies, half of the chopped green onion, and water. Bring to a boil and then reduce heat to low.
6.Add the seasoned chicken breasts to the skillet and let it cook for 20-25 minutes.
7.Remove the chicken breasts from the skillet, let it cool, and shred with a fork.
8.In a separate bowl, mix the shredded chicken, one cup of cheddar cheese, half of the can of enchilada sauce, and the remaining green onions together.
9.Spread some enchilada sauce on the bottom of a baking dish.
10.Spoon the chicken mixture onto the flour tortillas, roll them and place them seam-side down in the baking dish.
11.Pour the remaining enchilada sauce over the rolled tortillas, sprinkle with the remaining cheddar cheese and black olives. Top with sliced jalapenos.
12.Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
