Ingredients

2 skinless chicken breast halves
1/3 cup chopped cashews
1 cup baby spinach leaves , firmly packed
4 phyllo pastry sheets
1/3 cup shredded lite mozzarella cheese
1 egg , beaten
1/2 cup seasoned dry bread crumb
2 teaspoons italian seasoning , divided
60 g butter , melted
2 teaspoons minced garlic
2 tablespoons olive oil
1 can diced tomatoes
1/4 cup white wine
1/4 cup basil leaves , firmly packed
1/3 cup light cream
1 teaspoon italian seasoning
2 tablespoons garlic flakes
salt and pepper , to taste
Chicken Cyril With a Tomato Basil Sauce is a rich and flavorful dish that is sure to impress your guests. The dish consists of tender chicken breast halves stuffed with baby spinach, chopped cashews, shredded light mozzarella cheese, and seasoned dry bread crumbs rolled in phyllo pastry. This delicious bundle is then baked to crispy perfection and served with a tangy tomato sauce made from diced tomatoes, white wine, and basil leaves. The dish is rounded off with a side of creamy garlic sauce that complements the flavors of the chicken Cyril perfectly. Instructions

1.Preheat the oven to 180 C.
2.In a pan, toast the cashews until they are slightly browned. Remove from heat, chop, and set aside.
3.Cook the spinach until wilted. Season with salt and pepper to taste. Once cooled, chop and set aside.
4.Lay a phyllo pastry sheet and brush with melted butter. Repeat with three more sheets, topping with melted butter each time.
5.Sprinkle bread crumbs on top of the pastry stack.
6.Layer with chicken breasts, mozzarella cheese, cooked spinach, chopped cashews, and 1 teaspoon of Italian seasoning.
7.Roll the pastry stack to create a cylinder and arrange in a baking dish.
8.Brush the chicken Cyril with an egg wash and sprinkle more bread crumbs on top.
9.Bake for 35 minutes or until golden brown.
10.In a separate pan, heat olive oil and minced garlic over medium heat until lightly browned.
11.Pour in diced tomatoes with juice and white wine into the pan.
12.Simmer for 8-10 minutes until the sauce has thickened.
13.Add basil leaves and 1 tsp of Italian seasoning and allow to cook for 5 more minutes. Once done, remove from heat.
14.In a small saucepan, heat light cream, garlic flakes, salt, and pepper on low heat. Cook for 2-3 minutes.
15.Serve Chicken Cyril hot with tomato basil sauce and garlic cream sauce on the side.
