Ingredients

1 cup plain yogurt
1 teaspoon cornflour
2 tablespoons oil
2 cups onions , chopped
1 tablespoon fresh ginger , peeled and grated
1 tablespoon fresh garlic , crushed
4 teaspoons green chilies , chopped
12 large chicken thighs , skinned
1 tablespoon ground coriander
1 1/2 teaspoons ground cumin
3/4 teaspoon ground turmeric
3/4 teaspoon ground cayenne pepper
400 g canned tomatoes , chopped
1/2 cup fresh coriander , roughly chopped
2 teaspoons salt
1 1/2 teaspoons garam masala
1/4 cup fresh coriander , roughly chopped

Instructions

1.Marinate the chicken thighs with the yogurt and cornflour in a large bowl. Leave it for 30 minutes.
2.Heat the oil in a deep saucepan on medium heat. Add onions and sauté till they turn translucent.
3.Add in the ginger, garlic, and green chilies and sauté for 30 seconds.
4.Add in ground coriander, ground cumin, ground turmeric, and ground cayenne pepper. Mix well and cook for 30 seconds.
5.Add in the chopped tomatoes and mix well. Increase the heat and bring the curry to a boil, then reduce to a simmer and let it cook for 10 minutes.
6.Add in the marinated chicken thighs, fresh coriander, and salt. Mix well and cover the pan with a lid. Let it cook for 15 minutes, stirring occasionally.
7.Sprinkle garam masala and fresh coriander on top of the curry. Stir gently. Let it cook for another 5 minutes and remove it from heat.
