Ingredients

4 boneless skinless chicken breasts
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons garlic , minced
2 tablespoons creole seasoning
1 teaspoon black pepper
1/2 - 1 teaspoon kosher salt ( optional )
1/2 - 1 teaspoon red pepper flakes
1/2 teaspoon coriander
3 roma tomatoes , seeded & chopped
5 green onions , chopped
1 jalapeno , seeded and finely chopped
1 can diced green chilies
1 lb raw shrimp , shelled and deveined
1/2 cup dry white wine or 1/2 cup dry sherry

Instructions

1.In a bowl mix together olive oil, lemon juice, garlic, creole seasoning, black pepper, salt, red pepper flakes and coriander.
2.Coat chicken breasts with the mixture and let it marinate in the refrigerator for at least 2 hours.
3.Preheat the oven to 350 degrees F.
4.Grease a large baking dish and arrange the chicken breasts in it, add tomatoes, green onions, jalapeno, and green chilies.
5.Pour in the white wine or sherry.
6.Bake the chicken for 30 minutes, then add the shrimp and bake for an additional 10 minutes.
7.Serve hot with rice.
