Ingredients

2 teaspoons olive oil
1 leek , chopped
400 g skinless chicken thighs , cut in 2cm cubes
3/4 cup corn kernel
2 teaspoons grainy mustard
2 tablespoons flour
3/4 cup nonfat milk
8 sheets phyllo pastry
5 g olive oil flavored cooking spray
1/4 egg , whisked
1 tablespoon sesame seeds
These Chicken, corn and leek filo rolls are a delicious take on traditional spring rolls. Instructions

1.Heat oil in a large pan on medium heat. Add leeks and sauté for 2-3 minutes.
2.Add chicken and cook for 5 minutes or until golden brown.
3.Add corn and mustard. Stir in flour and gradually pour in milk, stirring continuously until mixture thickens.
4.Remove from heat and allow to cool. Preheat oven to 200°C.
5.Cut each filo sheet in half to create two rectangular pieces.
6.Put 1/8 of the chicken mixture along one end of the filo sheet, roll up tightly and place seam-side down on a baking tray. Repeat with remaining ingredients.
7.Brush the filo rolls with egg and sprinkle with sesame seeds.
8.Bake for 10-12 minutes or until golden brown.
