5 chicken stock cubes

3 tablespoons fresh chives , chopped

Instructions

1.Heat a large non-stick frying pan over medium heat. Add the leek and chicken, cook for 5 minutes or until chicken is browned.

3.Dissolve the stock cubes in the hot water and add 1 cup to the pan. Simmer, stirring occasionally, until the liquid is absorbed. Add another cup of stock and repeat until all the stock is absorbed and the rice is tender.
4.Stir in the evaporated milk, lemon rind and broccoli. Cook until all is heated through. Stir in 2 tablespoons of chives and season with pepper.
5.Serve and top with remaining chives and lemon zest.
