Ingredients

500 g ground chicken
1 small red onion , finely chopped
2 garlic cloves , minced
1/3 cup chopped fresh coriander
1 tablespoon Thai sweet chili sauce
1 egg white , moderately whisked
cooking spray
2 tablespoons Thai sweet chili sauce
2 tablespoons rice vinegar
2 tablespoons sugar
1 -2 dash lemon juice
1 -2 dash fish sauce
1 tablespoon chopped fresh coriander
1/4 cup water
8 cups shredded romaine lettuce ( we call it cos lettuce )
1 large carrot , grated
1 small cucumber , sliced

Instructions

1.In a large bowl, combine ground chicken, chopped red onion, minced garlic, chopped coriander, Thai sweet chili sauce, and egg white. Mix well.
2.Divide the mixture and shape into eight patties.
3.Spray a non-stick pan with cooking spray and heat over medium-high heat. Cook the patties for 4 to 5 minutes per side or until cooked through and golden brown.
4.In a small bowl, whisk together Thai sweet chili sauce, rice vinegar, sugar, lemon juice, fish sauce, chopped coriander, and water.
5.In a large bowl, toss the shredded romaine lettuce, grated carrot, and sliced cucumber with the sweet chili dressing.
6.Serve the cooked patties on top of the salad and enjoy!
