Instructions

1.Preheat the oven to 180°C (355°F).
2.In a large pan, heat olive oil over medium heat.
3.Add chicken thighs and cook until golden brown.
4.Once done, transfer them to a casserole dish.
5.In the same pan, cook the chorizo for 2-3 minutes and then add it to the casserole dish.
6.Add potatoes, onion, red capsicum, green capsicum, olives, garlic, rosemary, chili pepper flakes, oregano, fennel, peppercorns, and salt to the casserole dish.
7.In a small bowl, mix white wine with cornflour until smooth and pour it over the casserole.
8.Drizzle lemon juice over the casserole and cover with a lid or foil.
9.Bake in the preheated oven for 45-60 minutes until the chicken is cooked through and the vegetables are tender.
