1 1/2 cups chicken broth
1 cup uncooked long-grain rice
1/2 cup red enchilada sauce
1 1/2 onion , diced , divided
6 flour tortillas
4 cups diced cooked chicken breast , divided
1 pound Monterey Jack cheese , shredded , divided
1 can sliced black olives
4 cups refried beans , divided
1/4 cup vegetable oil
TOPPING
3 avocados , peeled and pitted
1/2 cup finely chopped cilantro
2 tablespoons lemon juice
3 green onions , diced
1/4 cup finely chopped jalapeno chile peppers
1 tomato , diced
2 cups shredded lettuce
1 cup sour cream
2 cups shredded Cheddar cheese
Chicken Chimichangas are a classic Mexican dish that has become a beloved staple in American cuisine. Instructions

1.In a large saucepan, bring the chicken broth and rice to a boil, cover and reduce heat to low, simmer for 18-20 minutes or until fully cooked.
2.Preheat oven to 375°F.
3.In a medium-sized bowl, stir together enchilada sauce and 1 diced onion.
4.Scoop 1/4 cup of chicken onto each tortilla, along with a heaping spoonful of cheese, black olives, refried beans, and the sauce mixture.
5.Roll each filled tortilla up.
6.In a large frying pan, heat up oil over medium-high heat, add in chimichanga and brown all sides.
7.Place chimichanga seam-side down on a baking sheet.
8.Bake in the preheated oven for 15 to 20 minutes, or until heated through.
9.Mix Avocado, cilantro, lemon juice, green onions, jalapeno chile pepper, tomato and salt and pepper to taste in a medium-sized bowl.
10.Place chimichangas on serving plates and add on shredded lettuce, sour cream, avocados mixture and cheddar cheese.
