Ingredients

4 ounces whole mild-to-medium-hot dried New Mexico chiles , stemmed and seeded 16-20 dried New Mexico chiles ( small to medium )
2 cups reduced-sodium chicken broth , divided
1 1/4 cups onions , chopped
3 garlic cloves , minced
2 tablespoons sherry wine vinegar or 2 tablespoons cider vinegar
1 1/4 teaspoons dried oregano , preferably Mexican
1 teaspoon salt
2 1/4 lbs boneless skinless chicken thighs , trimmed , cut into 1-inch cubes
Chicken “Carne” adovada is a traditional Mexican dish that has been enjoyed for centuries. This spicy and flavorful dish has its roots in the southern state of Oaxaca, Mexico. Instructions

1.Preheat the oven to 375°F.
2.In a large pot, combine the dried chiles and 1 1/2 cups chicken broth. Simmer over medium heat for about 20 minutes, stirring occasionally.
3.Remove from heat and let cool slightly. Using a blender, puree the mixture until smooth, adding additional chicken broth to thin if necessary.
4.Transfer the mixture back into the pot and add onions, garlic, vinegar, oregano, and salt. Cook over medium heat for about 15 minutes until the onions are translucent.
5.Let the mixture cool. Add chicken to the pot and toss to coat.
6.Transfer to a 9x13 baking dish and cover with foil. Bake for 45 minutes. Remove from the oven and let cool for 10 minutes.
