Ingredients

1 tablespoon olive oil ( divided use )
2 ounces pancetta , cut into 1/4 inch slices
4 garlic cloves , sliced thin lengthwise
8 chicken thighs ( bone-in )
salt and pepper
2 teaspoons flour
2 cups dry white wine
1 cup chicken broth ( low-sodium )
4 whole cloves
1 sprig fresh rosemary
1/2 - 3/4 teaspoon dried sage
2 bay leaves
1/4 - 1/2 teaspoon red pepper flakes
1 tablespoon lemon juice
2 tablespoons butter , unsalted

Instructions

4.Add remaining 1/2 tablespoon of olive oil to the pot.

7.Remove chicken with tongs and transfer to a plate.
8.Add garlic to the pot and cook until fragrant, about 30 seconds.

10.Stir to combine and bring to a simmer.
11.Return chicken and pancetta to the pot.
12.Cover and cook until chicken is cooked through and tender, about 45-60 minutes.
13.Remove chicken to a plate and cover with foil to keep warm.
14.Strain the sauce through a fine-mesh sieve into a small saucepan.
15.Add lemon juice and butter to saucepan.
16.Whisk together until butter is melted and sauce is smooth.
