1/3 cup thinly sliced basil , divided
2 tablespoons drained capers , divided

Instructions

1.Preheat oven to 425° F (220°C).
2.In a large bowl, toss together plum tomatoes, mushrooms, red onion, 2 tablespoons of olive oil, sherry wine vinegar, and salt and pepper to taste. Spread in a single layer in a large baking sheet.
3.Rub the chicken pieces with 1 tablespoon of olive oil, 1 tablespoon of chopped rosemary, salt, and pepper. Place the chicken pieces, skin side up, on top of the vegetables. Pour the red wine, diced tomatoes with juice, and chicken broth over the chicken and vegetables.
4.Roast the chicken and vegetables for about 45 minutes, basting occasionally, until the chicken is cooked through and vegetables are tender.
5.Sprinkle with remaining rosemary, basil, and capers before serving.
