Ingredients

1 tablespoon olive oil
3 shallots , chopped
3 garlic cloves , chopped
1 medium green bell pepper , seeded and finely diced
1/2 cup white wine ( not cooking wine )
10 ounces mushrooms , sliced
3 lbs bone-in skinless chicken breast halves or 3 lbs skinless chicken thighs
2 cups crushed tomatoes
2 tablespoons tomato paste
1 can pitted black olives or ( 6 ounce ) can kalamata olives , drained
2 tablespoons chopped fresh parsley ( optional )
1/8 - 1/4 teaspoon crushed red pepper flakes ( optional )
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
salt & freshly ground black pepper
Chicken Cacciatore is an Italian dish consisting of chicken braised in a tomato-based sauce. Instructions

1.Turn on the Instant Pot and press the SAUTE function. Add the olive oil and let it heat up.
2.Once the oil is hot, add the shallots, garlic, and bell pepper and saute for 2-3 minutes.
3.Pour in the white wine and let it simmer for a minute.
4.Add the mushrooms and stir well.
5.Add the chicken pieces along with crushed tomatoes and tomato paste, olives, parsley and crushed red pepper flakes (if using).
6.Cancel the saute function and secure the Instant Pot lid, ensuring the valve is set to seal.
7.Press the MANUAL or PRESSURE COOK button, select HIGH pressure, and set the timer for 10 minutes. It will take around 10 minutes to come to pressure.
8.After cooking time is over, let the pressure release naturally for 10 minutes. Afterward, use quick release for any remaining pressure.
9.Once you can safely open the lid, sprinkle the grated cheese and stir well.
10.Serve hot with pasta or vegetables.
