1/2 cup fresh spinach leaves , stemmed
1/2 cup goat cheese , softened
2/3 cup olive oil

These chicken burritos are a quick and easy weeknight dinner that are packed with flavor. The mushrooms and sun-dried tomato-goat cheese mixture add a unique and delicious twist to the classic chicken burrito. Instructions

1.Preheat oven to 375°F (190°C).

5.Place the baking sheet in a preheated oven and bake for 15-20 minutes, or until the tortillas are crispy and golden.
6.Serve hot with sour cream and pico de gallo.
