Ingredients

2 - 2 1/2 lbs broiler-fryer chickens , halved or quartered
6 tablespoons butter
2 tablespoons oil
salt
6 tablespoons strong Dijon mustard
3 tablespoons finely minced shallots or 3 tablespoons green onions
1/2 1/2 teaspoon basil or 1/2 teaspoon tarragon
1/8 teaspoon pepper
1 pinch cayenne pepper
4 cups fresh white breadcrumbs ( from homemade or bakery bread )
Broiled Chicken With Mustard, Herbs, and Breadcrumbs is a simple yet tasty dish that's perfect for dinner any time of the year. Instructions

1.Preheat the broiler.
2.Wash and pat dry chicken pieces, then place onto a broiler pan. Lightly season both sides of the chicken with salt.
3.In a small saucepan, melt butter over medium heat. Add oil, mustard, shallots/green onions, basil/tarragon, black and cayenne pepper. Mix well, then brush over the chicken pieces.
4.Top chicken with breadcrumbs, press down lightly to make them stick.
5.Place under the broiler to cook until golden brown, about 10-12 minutes.
6.Remove the chicken from the pan and let it rest.
7.Serve and enjoy!
