Chicken Broccoli Alfredo is a classic Italian-American dish that typically consists of pasta, chicken, broccoli, and a creamy Alfredo sauce. This low carb version skips the pasta and uses steamed broccoli as the base, making it a healthier option without sacrificing flavor. The chicken is roasted to keep the dish simple, while the Romano cheese and heavy cream create the creamy, flavorful Alfredo sauce that we all love. This recipe is perfect for those who are looking for a low carb option that is still tasty and satisfying.

Instructions

1.Preheat the oven to 375°F. Season the chicken breasts with salt and black pepper.
2.Place the chicken breasts in a baking dish. Roast for 20-30 minutes, or until cooked through.

4.Add the heavy cream to the saucepan and whisk until smooth. Add the grated Romano cheese and whisk until the cheese has melted and the sauce is creamy.

6.Pour the egg yolk mixture into the saucepan with the rest of the cream sauce and whisk to combine.
7.Add the steamed broccoli to the sauce and stir to coat.
8.Slice the cooked chicken breasts and arrange over the top of the broccoli and sauce. Serve immediately.
