2 chicken breast fillets , halved
8 sheets phyllo pastry
1 can asparagus spear
125 g brie cheese , sliced
These Chicken, Brie & Asparagus Parcels are a delicious and moreish way to enjoy asparagus when it's in season. The combination of juicy chicken breast, creamy brie and perfectly cooked asparagus is a match made in heaven. When wrapped up in crispy, buttery phyllo pastry, these parcels become a memorable meal that is sure to impress. Instructions

1.Preheat the oven to 200°C (180°C fan) mark 6. Cut each chicken breast into 3 equal-sized pieces and set aside.
2.Cut each sheet of phyllo pastry lengthways into 3 strips, then once crossways, so you have 6 long rectangles per sheet.
3.On a clean work surface, lay out a rectangle of pastry, brush with melted butter all over then place another rectangle on top, brushing the top of that one with more butter.
4.Arrange a few asparagus spears in the middle of the pastry rectangle, then top with a chicken piece and a slice of brie.
5.Fold the long sides of the pastry over the chicken and brie, then the short ends, to create a parcel. Place on a baking sheet seam-side down and repeat with the remaining pastry and filling. Brush the parcels with a little more melted butter.
6.Bake the parcels for 20-25min until the pastry is crisp and golden and the chicken is cooked through. Serve.
