1 skinless , boneless chicken breast half
1/2 cup couscous
1/2 cup water
1 tablespoon unsalted butter
1 pinch salt

3 dates , pitted and chopped
1/4 cup mascarpone cheese
1/4 cup heavy cream
salt and ground black pepper to taste ( optional )
1 date , pitted and chopped
1/4 cucumber , diced
1/2 tomato , diced
1 teaspoon lemon juice ( optional )

Instructions

1.Preheat the oven to 400 degrees F (200 degrees C).
2.Place the chicken breast on a baking sheet and season with salt and pepper, optional.
3.Bake in the preheated oven until the chicken breasts are no longer pink in the center and the juices run clear, about 20 to 25 minutes.
4.While the chicken is baking, add water, unsalted butter, and a pinch of salt to a small pot and bring to a boil.
