Ingredients

2 tomatoes , medium-size
4 boneless skinless chicken breasts
1/4 cup fresh tarragon leaves
4 tablespoons olive oil
1 lemon , juice of
1/4 teaspoon salt , to taste
1/4 teaspoon pepper , to taste
1 dash cayenne , to taste
1 teaspoon Dijon mustard ( or whole-grain mustard )

Instructions

1.Preheat the oven to 400°F.
2.Cut 4 squares of parchment paper and fold each in half.
3.Cut the tomatoes into thin slices and arrange them on one half of each folded parchment paper.
4.Season the chicken breasts with salt, pepper, and cayenne. Place each chicken breast over the tomatoes.
5.Drizzle each chicken breast with 1 tablespoon of olive oil and sprinkle with fresh tarragon leaves.
6.In a small bowl, mix together the Dijon mustard and lemon juice. Drizzle the mixture over each chicken breast.
7.Fold the other half of each parchment paper over the chicken and tomato mixture, starting at one end and working your way to the other end. Tightly crimp the edges of the paper to seal the packet.
8.Place the parchment paper packets on a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through.
9.To serve, carefully cut open each parchment paper packet and transfer the chicken and tomatoes to plates.
