Ingredients

1/4 cup olive oil
4 chicken breasts
1 tablespoon whiskey
3 teaspoons oregano , chopped
1/4 cup orange marmalade
1/4 cup white wine
2 1/2 ounces carrots , peeled and cut into 2in pieces
2 garlic cloves , whole
5 ounces potatoes , peeled
1 tablespoon heavy cream
1 ounce butter
salt and pepper

Instructions

1.Preheat oven to 180°C/350°F.
2.In a large bowl, mix together the olive oil, whiskey, and chopped oregano.
3.Add chicken breasts to the bowl and toss to coat well.
4.In a baking dish, add the chicken breasts as well as garlic cloves, carrots, and potatoes. Season with salt and pepper.
5.Bake in the oven for 25 minutes or until the chicken is cooked through and the vegetables are tender.
6.In a small saucepan, mix together the orange marmalade and white wine. Cook over medium heat for 5 minutes, stirring occasionally.
7.Remove the chicken and vegetables from the oven. Let the chicken rest for 5 minutes before slicing.
8.In a separate small saucepan, melt the butter over low heat. Once melted, stir in the heavy cream until well combined.
9.Serve the sliced chicken with the vegetables on the side. Drizzle the whiskey and oregano mixture over the chicken and vegetables, followed by the orange marmalade and white wine sauce. Finish off by drizzling the melted butter and cream sauce over the top.
