2 whole eggs

8 large chicken breasts

Instructions

1.Preheat oven to 375 degrees Fahrenheit
2.In a pan, heat 1/2 cup of olive oil over medium heat
3.Add 2 chopped green onions and 1 chopped medium onion to the pan. Cook for about 5 minutes
4.Add 1 pound of frozen spinach (squeeze to remove excess water) and 1/2 cup of fresh chopped dill to the pan. Cook for another 5 minutes, stirring frequently.
5.Remove from heat and let mixture cool for a few minutes.
6.Add 2 beaten eggs to the mixture and mix well. Then add 1 pound of crumbled feta cheese and 1 tablespoon of ground pepper. Mix well.
7.Slice 8 large chicken breasts and stuff with the mixture. Close the opening and tie up with toothpicks.
8.Brush olive oil over the stuffed chicken breasts and place them in a baking dish.
9.Add a few lemon slices on top of the chicken breasts and sprinkle with oregano
10.Bake the stuffed chicken breasts for 30-35 minutes until they are golden brown.
11.Once the chicken is cooked, remove the toothpicks and serve.
