Ingredients

300 g basmati rice
25 g butter
1 large onion , finely sliced
1 bay leaf
3 cardamom pods
1 small cinnamon stick
1 teaspoon turmeric
4 skinless chicken breasts , cut into large chunks
85 g raisins
850 ml chicken stock
chopped coriander , to serve
toasted sliced almonds , to serve

Instructions

1.Wash the rice well and soak it in cold water for 30 minutes. Drain.
2.Heat the butter in a large saucepan over medium heat and add the onion.

4.Stir in the chicken and cook for a few minutes until it is browned on all sides.
5.Add the raisins and chicken stock and bring to a boil.
6.Reduce the heat to low and add the rice. Cover and cook for 20 minutes or until the rice is tender and the chicken is cooked through.
7.Remove from heat and allow to sit for 5 minutes.
8.Garnish with chopped coriander and toasted sliced almonds before serving.
