10 sheets frozen phyllo pastry , thawed
2 1/4 cups ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup shredded provolone cheese
1/3 cup parmesan grated cheese or 1/3 cup romano cheese
1 large egg , slightly beaten
salt
1/8 teaspoon grated fresh nutmeg
1/3 cup melted butter
1/4 cup chopped onion
1 medium zucchini , sliced
1 cup sliced mushrooms
3 -5 crushed red pepper flakes ( optional )
1/4 cup chopped red pepper
1/4 cup chopped yelloew pepper
1/4 cup chopped green pepper
1/2 teaspoon minced fine garlic
1 large boneless chicken breast , sliced or chopped
1 tablespoon chopped sun-dried tomato
2 tablespoons fresh snipped Italian parsley
2 teaspoons chopped fresh basil
1 cup homemade tomato sauce
salt and pepper

Instructions

1.Preheat oven to 375°F. Grease an oven-safe 9-inch pie dish.
2.In a bowl, combine ricotta cheese, mozzarella, provolone, parmesan, egg, salt, and nutmeg. Set aside.
3.In a large skillet, heat 2 tablespoons of melted butter over medium-high heat. Add onions, zucchini, mushrooms, crushed red pepper flakes, red pepper, yellow pepper, and green pepper. Cook until the vegetables have softened and reduced in size. Add garlic and chicken, and cook until the chicken is no longer pink.
4.Stir in sun-dried tomato, parsley, basil, and tomato sauce. Simmer for 5 minutes or until the sauce has thickened.
5.Layer five sheets of phyllo pastry in the pie dish, brushing each sheet with melted butter. Spread the cheese mixture over the top. Cover with the remaining sheets of phyllo, brushing each one with butter. Fold the edges of the phyllo pastry over the top. Bake for 25-30 minutes, or until golden brown. Let cool before serving.
