Ingredients

4 medium flour tortillas
1 lb chicken , cut into little bite-sized pieces
1/2 cup scallion , diced
8 slices bacon
1 avocado , diced
1/2 cup mild cheddar cheese , shredded
2 tablespoons butter
salt & pepper

Instructions

1.In a skillet, cook the bacon over medium heat until crispy, then remove from skillet and set aside on a paper towel.
2.In the same skillet, add the diced chicken and cook until no longer pink. Season with salt and pepper as desired. Set aside.
3.In a separate skillet, melt 1 tablespoon of butter over medium heat. Place one flour tortilla in the skillet, then add half the amount of scallions, bacon crumbles, diced avocado, cheddar cheese and chicken, spreading each ingredient evenly over the tortilla.
4.Place another tortilla on top of the ingredients and gently press down. Cook for about 2-3 minutes or until the tortilla bottom is golden brown, then carefully flip the quesadilla over and cook for another 2-3 minutes until other side is golden brown. Repeat with remaining tortillas and ingredients.
5.Once done, remove quesadilla from skillet and let cool for 1 minute, then slice and serve.
