Ingredients

3 tablespoons olive oil
1/2 cup garlic clove , grated
1/2 cup fresh ginger , peeled and grated
1 cup fat free Greek yogurt
2 1/2 teaspoons kosher salt
1/2 teaspoon black pepper , freshly ground
1 lb boneless skinless chicken thighs , cut into large bite-sized chunks
3 tablespoons light butter
1 serrano pepper , minced ( seeds removed )
2 tablespoons tomato paste
1 teaspoon garam masala
2 teaspoons paprika
8 roma tomatoes , diced
1 cup water
1 tablespoon dried fenugreek leaves , finely chopped
1/2 cup half-and-half
1/2 ounce fresh cilantro , for garnish

Instructions

1.In a large bowl, whisk together 2 tablespoons of olive oil, grated garlic and ginger, Greek yogurt, 2 teaspoons of kosher salt, and black pepper.
2.Add in the chicken pieces and stir to coat. Cover and let marinate in the refrigerator for at least 1 hour or overnight.
3.In a large skillet, heat the remaining tablespoon of olive oil and light butter over medium-high heat. Add the minced serrano pepper and stir for about 30 seconds.
4.Add the tomato paste, garam masala, and paprika and stir for about 1 minute.
5.Stir in the diced tomatoes and the remaining 1/2 teaspoon of kosher salt and cook until the tomatoes start to break down, about 5-7 minutes.
6.Stir in the marinated chicken and any excess marinade, along with 1 cup of water. Bring to a boil and then reduce the heat to a simmer. Cover and cook for about 20-25 minutes, stirring occasionally, until the chicken is cooked through.
7.Once the chicken is cooked, stir in the chopped artichoke hearts and the chopped fenugreek leaves.
8.Add in the half-and-half and stir until the sauce is heated through.
9.Serve hot, garnished with fresh cilantro leaves.
