Ingredients

6 -12 chicken pieces , from leftover cooked chicken
2 minced garlic cloves
3 green onions , sliced
4 carrots , peeled , split into 4 long pieces , then cut into 1 inch lengths
4 cups low sodium chicken broth
1 package yellow rice ( I used Mahatma brand )
This chicken and yellow rice soup is the perfect comfort food for a rainy day or when you're feeling under the weather. It's easy to make with leftover chicken and the yellow rice adds a depth of flavor that is unexpected. The carrots also add a touch of sweetness and provide a good source of vitamins.

Instructions

1.In a large pot, sauté minced garlic and sliced green onions until fragrant.
2.Add in 1 inch carrot pieces and 4 cups low sodium chicken broth.
3.Bring to a boil and add in the package of yellow rice. Stir well and let cook for 5 minutes.
4.Add in the leftover cooked chicken pieces and let simmer for 10 minutes.
5.Serve hot.
