Instructions

.Heat olive oil in a large Dutch oven over medium heat. Brown chicken, in batches, for 5 minutes on each side. Once browned, transfer chicken to a plate.
.Once all the chicken is browned, add garlic to the Dutch oven, and sauté for a minute.
.Add white wine, chicken stock, thyme, bay leaves, and browned chicken to the Dutch oven. Bring the mixture to the boil, and then cover the container with a lid and transfer the container to the heated oven.
.Bake in the oven for 30 minutes.
.In a small bowl, combine cornstarch, and heavy cream, whisk until well combined.
.Remove the casserole from the oven after 30 minutes of baking, stir in asparagus, baby leeks (or scallions), baby carrots, and peas.
.Pour the mixture of cornstarch and heavy cream into the Dutch oven and gently mix everything together. Return the Dutch oven to the oven, and bake, uncovered, for 20-30 more minutes, or until the vegetables are tender and the sauce is thickened. Remove bay leaves and sprigs of thyme before serving.
