Ingredients

1/2 piece carrot
1/4 piece burdock root , gobo
2 bunches japanese mustard spinach ( komatsuna )
75 g maitake mushrooms
300 g chicken thighs
1 cup dashi stock
2 cups soymilk ( non-adjusted )
1 tablespoon sake
3 tablespoons miso

Instructions

1.Cut the carrot into 5mm slices, and the burdock root into 3cm lengths.
2.Remove the roots of the mustard spinach and chop it coarsely.

4.Cube the chicken thighs into bite-sized pieces.
5.Preheat a pot and sauté the chicken thigh until the chicken is slightly brown.
6.Add the carrot, burdock root, and the core parts of the maitake mushrooms with the chicken and sauté them together for 2 minutes.
7.Add the dashi stock to the pot and bring it to a boil.
8.Simmer for about 10 minutes or until the vegetables are cooked through.
9.Lower the heat and add the soymilk, sake, and miso to the pot and stir well.
10.Add the mustard spinach and simmer for another 1-2 minutes, then serve.
