1 -2 clumps enoki mushrooms ( either fresh or canned )
8 -10 inches burdock root , fresh preferred ( gobo )
1/4 lb fresh spinach ( or shungiku , edible chrysanthemum leaves )
1 lb cooked udon noodles ( thick wheat noodles )
3 cups dashi ( basic Japanese soup stock )
5 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons sugar
