Ingredients

6 cups chicken broth
1 lb boneless skinless chicken thighs
2 garlic cloves , smashed
3/4 cup israeli couscous ( the big ones )
3/4 cup carrot , sliced 1/4-inch thick
1/2 bunch swiss chard , center ribs and tough stems removed and leaves torn
kosher salt
fresh ground black pepper
1/4 cup fresh dill
2 tablespoons fresh chives , thinly sliced
lemon wedge , for serving

Instructions

1.In a large pot, bring the chicken broth, chicken thighs, and garlic to a boil. Reduce heat and simmer for 10-12 minutes or until chicken is cooked through.
2.Remove chicken from broth and shred into small pieces.
3.In the same pot, add the sliced carrots and couscous to the broth and simmer for 5 minutes.
4.Add the torn swiss chard and continue to simmer for another 5 minutes or until the chard is wilted and the couscous is cooked.
5.Season with salt and fresh ground black pepper to taste.
6.Serve the soup with shredded chicken, fresh dill, chives, and a lemon wedge for squeezing over the top.
