2 skinless , boneless chicken breast halves
1 1/4 cups Italian salad dressing , divided
4 cups fresh spinach , torn
1/3 cup crumbled feta cheese
8 sun-dried tomatoes , packed without oil , chopped
1 loaf focaccia bread , cut into 1/2-inch thick slices
1/4 cup olive oil

Instructions

4.Meanwhile, in a large mixing bowl, add spinach, feta cheese, sun-dried tomatoes and ½ cup of Italian dressing. Mix well until all ingredients are combined.
5.Preheat the broiler. Brush olive oil onto each side of focaccia bread slices and place them onto a baking sheet. Broil the bread slices for 1-2 minutes per side, or until golden brown and slightly crisp.
6.Top each bread slice with spinach mixture and some cooled chopped chicken. Serve and enjoy!
