Ingredients

2 skinless chicken breasts
1/3 cup lemon juice
1 tablespoon olive oil
2 cloves garlic , crushed
1/3 cup of fresh mint , chopped
1 medium onion , chopped
1 can crushed tomatoes
1 kg english spinach
2 Turkish bread
200 g reduced fat feta cheese

Instructions

1.Preheat oven to 220°C (200°C fan forced).
2.Coat the chicken with lemon juice, olive oil and garlic and let it marinate for 15 minutes.
3.Cook the chicken in a non-stick frying pan until golden brown. Add chopped onion and cook for 2 minutes.
4.Add crushed tomatoes and simmer for 5 minutes. Add fresh chopped mint and spinach and cook for 2-3 minutes.
5.Lay out Turkish bread on a baking tray. Evenly spread the chicken and spinach mixture on top.
6.Crumble reduced-fat feta cheese over the top.
7.Bake for 10-12 minutes until cheese is melted and golden brown.
