12 uncooked lasagna noodles
3 tablespoons olive oil
1 cup onion , chopped
3 garlic cloves , crushed
2 packages frozen spinach
3 cups diced cooked chicken
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cups ricotta cheese
1 large egg
1 1/2 cups prepared pesto sauce , plus
2 tablespoons prepared pesto sauce
3/4 cup grated parmesan cheese
2 cups shredded mozzarella cheese

Instructions

1.Preheat oven to 375°F (190°C).
2.Cook the lasagna noodles according to package directions until they are slightly undercooked. Drain them and set aside.

4.Add the frozen spinach, chicken, salt, and black pepper to the skillet. Stir well to combine, and cook until the spinach is thawed and the chicken is hot, about 5 minutes.
5.In a separate bowl, mix the ricotta cheese, egg, and 1 1/2 cups of pesto sauce until well combined.
6.Spread 1/4 cup of pesto sauce in the bottom of a 9x13 inch baking dish. Arrange 3 lasagna noodles on top. Spread 1/3 of the ricotta cheese mixture over the noodles. Top with 1/3 of the chicken mixture. Sprinkle 1/4 cup of grated parmesan cheese and 1/2 cup of shredded mozzarella cheese over the top.
7.Repeat layers twice more, starting with the lasagna noodles and ending with the cheeses.
8.Drizzle 2 tablespoons of pesto sauce over the top of the lasagna.
9.Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden brown and the lasagna is bubbling.
10.Let the lasagna cool for a few minutes before slicing and serving.
