Ingredients

1 large red bell pepper , roasted and seeded ( capsicum )
1 shallot , chopped
1 1/2 tablespoons chopped walnuts
1 1/2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1/4 teaspoon salt , plus
1/8 teaspoon salt
1/4 teaspoon fresh ground black pepper , plus
1/8 teaspoon fresh ground black pepper
2 tablespoons extra virgin olive oil
3/4 lb boneless skinless chicken breast
2 large portabella mushrooms , stemmed , brushed clean and halved
1 whole-grain baguette , cut crosswise into 4 sections , each about 6 inches long
4 butter lettuce leaves ( Boston )
1 tomatoes , thinly sliced

Instructions

1.Begin by preheating your oven to 400°F (200°C).
2.On a baking sheet lined with foil, put the red bell pepper and roast for 20 - 25 minutes until lightly charred.
3.Remove the peppers from the oven, anchor them with foil and allow them to cool for 10 minutes.
4.Once cooled, remove the skin and seeds and cut into small strips.
5.Cut the chicken breasts into 4 equal pieces and lightly salt and pepper.
6.Place the portabella mushroom halves onto a grill and sprinkle with salt and pepper
7.In a small bowl, whisk together the shallot, balsamic vinegar, dijon mustard, salt, pepper, walnuts, and olive oil.
8.On a grill or in a pan, over medium-high heat, cook the seasoned chicken and portabella mushroom halves until the chicken is cooked through and the mushrooms are tender.
9.Toast the bread for 2 minutes.
10.Spread the balsamic shallot mixture over the bread slices.
11.Assemble the sandwich by layering lettuce leaves, chicken, portabella mushrooms, tomato slices and roasted red pepper. Put the top slice of bread on.
12.Cut the sandwich into four sections and serve.
