Ingredients

1 kg chicken wings
4 star anise
2 cm piece ginger , sliced
2 green onions , roughly chopped
2 tablespoons light soy sauce
1/4 cup shaoxing wine
300 g pork mince
2 green onions , finely chopped , extra
1 stick celery , finely chopped
1 teaspoon sesame oil
1 tablespoon soy sauce
salt and pepper , to taste
12 wonton wrappers
300 g thin egg noodles

Instructions

1.Rinse the chicken wings and put them in a large pot with enough water to cover them. Add the star anise, ginger, green onions, and light soy sauce. Bring to a boil and then reduce the heat to a simmer. Cover and simmer for 45 minutes.
2.In a pan, cook the pork mince until browned. Add the celery and extra green onions and cook for 2 minutes. Add in the shaoxing wine, soy sauce, and sesame oil and continue cooking for another 2 minutes.
3.Remove the chicken wings from the pot and discard the bones. Add the chicken meat back to the pot and bring to a boil.
4.Put the wonton wrappers and noodles in the pot and cook for 3 minutes, or until soft. Season with salt and pepper to taste.
5.Serve hot and enjoy!
